One night the only thing left in the fidge was ground beef and eggs. This brought to mind one of my favorite meals made by my grandmother corned beef hash w/ a runny egg cooked on top. Oh, that was the best! I might have to go get me a can o’ dat, and have myself a splurge!
But for my in a pinch, spur of the moment paleo meal this was really yummy! The eggs and seasoned beef cooked together had just enough of the flavor I loved as a kid -the boys loved it too! We had it again last night, and the big surprise, the youngest boy who “haaaaates” beef, ate it both times with no complaints; I believe it’ll become a regular now. I still need to work on my timing for the eggs though, to achieve runny egg perfection; maybe see if I can find some spices to mimic corned beef too.
I will certainly be having at least one, olde school version of this though, soon!
